This Pad Thai Ramen Noodles dish is a perfect go-to meal during emergencies or hurricanes when you’re relying on shelf-stable ingredients.

1/4 cup creamy peanut butter

3 tablespoons low-sodium soy sauce

1 tablespoon brown sugar

1/2 tablespoon chili garlic sauce (sriacha or sriracha packets, adjust to taste)

2 teaspoons toasted sesame oil

2 teaspoons vegetable oil

Optional garnishes: Crushed peanuts, additional lime juice, or hot sauce

Instructions

  1. Cook the Noodles:
    • In a large saucepan, boil water and cook the ramen noodles according to package directions (about 2-3 minutes). Drain most of the water, reserving about 1/4 cup.
  2. Prepare the Sauce:
    • In a medium bowl, whisk together the peanut butter, soy sauce, brown sugar, lime juice, chili garlic sauce, sesame oil, and reserved ramen water until smooth.
  3. Combine:
    • Return the saucepan to medium heat and add vegetable oil. Once hot, add the drained noodles and pour in the peanut sauce. Toss everything together until well coated.
  4. Serve:
    • Serve immediately, garnished with crushed peanuts and additional lime juice or hot sauce if desired.
