Without power, this meal can be cooked on a gas or camping stove.
Ingredients
1 (12-ounce/340g) can of cooked ground beef
2 tablespoons taco seasoning
1 (16-ounce/454g) can refried beans
1/4 cup water
1 (13-ounce/368g) bag tortilla chips
1 (15-ounce/425g) jar of shelf-stable cheese sauce
1/4 cup pickled jalapenos
1 (15-ounce/425g) jar of salsa
1 (4-ounce/113g) can diced green chiles
1 (8-ounce/227g) can black olives, sliced
Instructions
In a skillet over medium heat, add the canned ground beef along with taco seasoning. Stir and cook for about 5 minutes, until heated through.
Add the refried beans and ¼ cup water to the skillet, stirring until well combined and warmed.
Place tortilla chips on a large plate or in a shallow pan. Pour the warmed beef and bean mixture evenly over the chips.
Drizzle cheese sauce over the beef and beans.
Top with pickled jalapenos, diced green chiles, and sliced black olives.
Serve with salsa on the side.
If baking is required and there’s no power, use a covered camping skillet or Dutch oven over a butane or camp stove to warm the nachos until the cheese sauce is melty and the chips are heated.
